Lohikeitto

Ingredients

For 4 people:

  • 8 potatoes (around 500g with skin)
  • 600g salmon fillets
  • 2 stock cubes
  • 1 onion
  • 1 bay leaf (alloro)
  • 1,5 liters water
  • 40dl cream
  • butter (noce/25 g)
  • salt qb
  • pepper qb
  • dill (tilli, fresh if possible, dry still ok) qb

Procedure

  1. Prepare 1,5 liters of water boiling
  2. Clean and remove the skin of the potatoes, then cut them in cubes (1-2 cm size)
  3. Clean the salmon from the skin and cut it into cubes (about 2cm)
  4. Chop the onion and shimmer with butter, until the onion becomes golden or transparent
  5. Add the potatoes and mix to get all the flavors and let cook a minute to get little colour
  6. Pour some water (1l) just enough to cover the potatoes and some more (add more to have it more liquid, this or less to have it more creamy)
  7. Let boil and add the stock cubes and some salt
  8. Right before the potatoes are done, we add the salmon
  9. Steer and decide whether you want more water or not
  10. Add the cream and lower the heat to make it cook slowly
  11. Add a bay leaf
  12. Let cook for 20 minutes
  13. 5/10 minutes before it's done, add the dill (don't be scared) and adjust with salt and pepper
